《ポイント》
♦リゾットを煮る時
・最初に必ず塩をひとつまみ。
・沸いた状態キープ
・水分足りない時はこまめに足す
*一気に入れちゃうと最後に水分量が合わなくなるし、沸いてない状態なる。
♦最後にバターとチーズを混ぜる時はなるべく手早く。
♦絶対火にかけない。チーズが固まったり分離したりして重たくなっちゃう。
